Ingredients:

1 cup of olive oil

2 tbsp of tomato paste

4-5 ripe tomatoes (or a can of chopped tomatoes)

2 onions, finely chopped

Salt and pepper

1 kilogram of fresh green beans, cleaned

3 cloves of garlic

½ bunch of parsley

3 large potatoes

Instructions:

Wash and clean the green beans, removing their side fibers.

In a large pot, heat the olive oil and then add the chopped onion to sauté. Once it becomes transparent, add the garlic and the green beans, and let them sauté for a few minutes until they slightly wilt.

Add the grated tomato, tomato paste, and water (you will need about 2 cups of water). Reduce the heat and let the dish simmer. Add salt and pepper to taste.

Clean the potatoes and cut them into small pieces. Add them to the dish along with the parsley.

Season with salt and pepper, cover the pot, and let it simmer on low heat for at least 45 minutes, until you see the beans absorb the liquids and only a thick red sauce remains. Enjoy!
