Ingredients:
½ kilogram of giant beans
3 onions, sliced
2 carrots, thinly sliced
½ teaspoon of fresh basil
300 ml of olive oil
Salt and red pepper
500 grams of canned chopped tomatoes
300 ml of water from boiling the beans
Instructions:
Soak the giant beans overnight. After waking up, boil them in a pot until they are ready.
In a pan, sauté the onions with the olive oil over low heat until they soften but do not brown.
Add the carrots and canned chopped tomatoes, stirring.
Remove from heat and add the red pepper, boiled beans, water, basil, and salt. Mix well.
Transfer the mixture to a baking dish and bake at 200°C for about 30-40 minutes. They should have minimal liquid left and be slightly thickened. Enjoy!
