Ingredients:

1½ kilos of goat meat (front leg) and ribs, cut into portions

12 potatoes

2 tbsp mustard

1 tsp oregano

1 tsp thyme (optional)

2 lemons (juice)

2 cloves of minced garlic

¾ cup olive oil

Salt, pepper

Instructions:

Preheat the oven to 200°C. Clean the potatoes, cut them, place them in a baking dish, and season with salt and pepper. Wash the lamb and season with salt and pepper. In a bowl, prepare a mixture with olive oil, mustard, herbs, and garlic. Pour half of the mixture over the potatoes. Place the lamb on top and pour the remaining mixture over it. Pour 1½ cups of water over the dish and cover with parchment paper and aluminum foil. Bake the dish covered for one hour. Uncover the dish, pour lemon juice over the food, and lower the temperature to 180°C. Bake for about another hour until the lamb is cooked and turns golden brown.
